Farmhouse Tomato Soup

Tomato season is in summer, in a time when I find sweet, creamy, comforting soup is as far from my mind as the snows and rain of our winter months!

Here’s my solution. Freezing those beautiful heirloom tomatoes in the summer rewards me in a time when I am looking to create something warm, nutritious, and fresh tasting!

The following recipe is delicious because it uses simple, basic ingredients!

There is no substitute for fresh, nutritious foods.

You may source your ingredients locally, organically, and modify the soup to fit your diet needs!

To Start: Join me by placing 6 tbsp of Butter in a dutch oven. Melt the butter and add a medium onion. Saute till the onions are soft and the butter is browned a bit. This is the time to add wine if you like to cook with wine. 1/4 cup of White Wine. Stir to loosen the browned bits that may be attached to the bottom of your pot.

Add a 1 gallon bag of Frozen Heirloom Tomatoes (you may purchase these in our freezer at the farm stand) to your pot and thaw or if they are partially frozen add the juice to the pot along with the tomatoes.

Stir and warm before using a immersion blender or regular blender to puree smooth. Yes, the skins of the tomatoes puree nicely into a smooth soup.

Now add the rest of the ingredients to your pot.

4 Tbsp Sugar (optional)

2 tbsp chicken boulion

1/2 tsp black pepper

1/2 tsp salt

1 tsp dried Basil ( fresh is tasty but I rarely have fresh Basil in winter)

2 tsp dried Parsely (use fresh parsely if you have!)

1 1/2 cup heavy cream

Finally, the finishing touches to your dish. If I would like a thicker creamier soup I add 1/4 cup of flour into 1/2 cup of cold water. Whisk the two together till it is smooth and add it to your soup. Heat through and simmer for several minutes. Sometimes I like to make this soup ahead of time. I notice that the flavors blend as it warms on the stove for several hours. Ladel into bowls and top them with micro greens, fresh basil, croutons, or add a side of fresh bread. Serve and enjoy the fresh flavors of homegrown!

1- gallon bag of frozen heirloom tomatoes

6 tbsp butter

1- medium onion

4 tbsp sugar

2 tbsp chicken boulion

1/4 cup white wine

1/2 tsp black pepper

1/2 tsp salt

1 1/2 cup heavy cream

1 tsp dried basil

2 tsp dried parsely

4 tbsp flour

1/2 Cup cold water
