Savory Crepes

A Savory Crepe - try for a quick & simple dinner.

We don’t save crepes just for breakfast around here. These delicate egg pancakes make the quickest, coziest dinner on busy farm nights. Last week we browned a pound of sausage, grabbed fresh spinach, cottage cheese, and added a squirt of stone-ground mustard on our crepes for the simplest last-minute supper. The best part is how easy the crepe ingredients are to source right from our farmstand: eggs, milk, and toppings coming together to make a meal that feels both humble and special. And when you’re in the mood for something a little fancier, crepes happily go sweet too. We love to fill them with fresh fruit and whipped cream, slathered with butter, sprinkled with cinnamon, or drizzled with warm maple syrup for a simple treat that tastes like it took all afternoon.

Crepe Ingredients

  • 8 eggs

  • 1 ½ teaspoons salt

  • 2 cups milk

  • 1 ½ cups flour

  • Dash of oil (or melted butter)

    Instructions

    1. Blend the batter:
      In a blender or with immersion blender, whisk together the eggs and salt in a bowl. Add the milk and flour gradually, mixing until the batter is completely smooth with no lumps. Stir in a dash of oil.

    2. Rest the batter (optional but helpful):
      Let the batter sit for 15–30 minutes. This helps the flour hydrate and makes softer crepes.

    3. Heat your pan:
      Warm a nonstick skillet or crepe pan over medium heat. Lightly oil or butter the pan.

    4. Cook the crepes:
      Pour a small amount of batter (about ¼ cup, depending on pan size. 1/3 cup works perfectly in my 12” pan) into the center of the pan. Immediately lift and tilt the pan to swirl the batter into a thin, even layer.

    5. Flip:
      Cook until the edges lift easily and the underside is lightly golden, about 1 minute. Flip and cook the second side for 15–30 seconds.

    6. Repeat:
      Continue cooking crepes, lightly oiling the pan as needed. Stack cooked crepes on a plate and keep warm.

    7. Serve:
      Fill or top with your favorite sweet or savory ingredients. Get creative, and celebrate your local foods!
